The Black Swan Sauvignon Blanc 2023 is a pure expression of the Steenberg terroir and shows notes of nasturtium, sugar-snap pea, fresh asparagus and capsicum on the nose, while the palate supports the aromas with fresh lemon and subtle hints of dried apricot and mange tout. A mouth-watering acidity accompanies a full and long finish achieved with extended lees contact in tank. This is a wonderful food wine and will reward cellaring of between 10 – 20 years.

In The Cellar
The Black Swan Sauvignon Blanc is a blend of the top two Sauvignon Blanc vineyards on Steenberg and is a selection of the best fruit from the vintage. The grapes were crushed / de-stemmed and left on the skins for 18 hours at very cold temperatures. The juice was then left to settle for 2 days before fermentation. A slow and cold fermentation resulted in a fresh, yet weighted wine. The wine was kept on the lees for 9 months before being stabilised and bottled in November 2023.

Our 2023 Chardonnay shows upfront and intense aromas of raw honey, fresh Golden Delicious apple, butterscotch and shortbread on the nose. Subtle vanilla oak spice is carried through from the nose to the palate where it meets flavours of persimmon and cinnamon stick. It is complemented by a bright, clean structure and long finish, which in turn is tempered by a lifting acidity and chalky minerality. The wine is ready to enjoy now but will reward patience and age gracefully for the next 2- 5 years.

Our 2023 Semillon is a beautiful pale gold colour. Aromas of cinnamon and dried apricot and orange blossom greet you upon first inspection. There are also nectarine, dusty road and golden delicious notes. The palate shares much the same fruit profile as the nose though now with distinct custard and vanilla pod characteristics. Poised, weighted fruit concentrates the mid-palate, after which the wine broadens out with a rich, almost waxy texture and bright acidity. A citrus and floral spice lingers on the palate long after the last drop. This Semillon will continue to evolve in complexity and richness with age.
